CHINON
*The aging, in oak barrels, of 6 to 18 months then allows the wine to develop gradually, sheltered from the light and the trepidations. More than 900 barrels are located in three old quarries of tuffeau extraction, at a constant temperature of 12 ° C and at 85% of hygrometry.
Cultivating vines in Chinon 14 generations ago, when their ancestor, Mathurin Bottreau, bought his first parcel of vines in 1693.

It is Rodolphe Raffault that manages the estates that his father developed. His Burgundian past marked him definitely and imposed on his return the malo-lactic fermentations in barrels, rare back then in the Chinonais. For this reason, he buys more and more new oak barrels but also uses barrels over 10 years of age, respecting the aromatic palette adapted to each wine

Jean-Maurice Raffault is a figure of the ‘Chinonais’. When he took over as head of the family estate in the 1970s, he changed local practices and initiated changes that would soon be revived in the region. He initially abandoned polyculture to concentrate on viticulture. In 1973, he begins only with 4.5 hectares of the 9 ha of vines of the family of his father, and grows it to 50 ha during his brilliant career until his death in 2009.
